Founded in 1994 by Mate Vekic in Savudrija, the Mate Olive Oil estate is dedicated to showcasing Istrian olive oil excellence through meticulous and sustainable cultivation. Hand-harvested and pressed quickly, the olives yield oils of great purity, recognized as among the finest in the region.

We selected Viola Tonda for its delicate character, freshness, and finesse. A unique, elegant, and light oil that subtly reveals the personality of the Buza variety.

Away from light and heat, ideally in a cool, dry place. Close tightly after use.

Raw or cooked?

Primarily raw (as a finishing touch, in salads, on vegetables) to preserve the full aromatic range. For cooking, prefer gentle heat.

How to taste it just like at the estate?

Pour a drizzle, wait a few seconds, then taste. The herbaceous notes and length emerge gradually.

How long after opening?

To enjoy the best of its fruitiness, taste it preferably within the weeks following opening.
