Cézanne and Sainte-Victoire: A Timeless Source of Inspiration
Immortalized through the eyes of Paul Cézanne, Sainte-Victoire Mountain is much more than a landscape: it is a presence, a...
Though they may seem strange at first glance, the colored glasses used in olive oil tastings are no accident. They play a crucial role: ensuring an accurate sensory analysis focused solely on taste and aroma.
During a professional tasting, every detail matters. Above all, any visual influence must be avoided. Unlike wine, the color of olive oil - whether greenish or golden - is not a reliable indicator of its quality. It depends largely on the olive variety or its degree of ripeness.
This is why tasting glasses are opaque and tinted, most often blue, sometimes red. This color completely masks the oil's appearance, allowing the taster to focus solely on what matters: the aromas on the nose, followed by the sensations on the palate.
Their shape is also carefully designed. Tapered toward the top, they capture and concentrate the aromas. Held in the palm of the hand, they allow the oil to warm slightly, releasing its full aromatic complexity.
Using these glasses means adopting a rigorous and sensory approach to tasting, similar to that of professionals and international juries.
At the Héritage Victoire estate, we have chosen to uphold this standard. Our tastings - whether of our own oils or of grand cru oils sourced from around the world - are conducted using these professional glasses. It is a way of offering an authentic experience, where the only thing that matters is the dialogue between your senses and the olive oil.
